Hearty Bean Soup

meaty ham bone
1 3-pound
jar Great northern beans
3
quarts water
4 or
5 carrots (peeled)
2
medium onions (peeled)
1-cup
brown sugar (not packed)
1 bay
leaf
6
peppercorns
1-teaspoon
salt
4 or
5 potatoes (peeled, boiled and mashed)
Combine
ham bone, beans and water in a large pot. Place carrots and onions in food
processor and chop fine. Add to pot with brown sugar, bay leaf, peppercorns and
salt. Bring to boil, and then simmer 2-3 hours till beans mush. Using a potato
masher, mash beans. Add mashed potatoes. Take out ham bone and remove the meat
from bone. Return meat to pot and simmer one more hour.
