Carrot Cake
A very rich recipe
2 cups flour
2 cups sugar
1 ½ teaspoon baking soda
1 ½ teaspoon baking powder
2 teaspoons cinnamon powder
¼ teaspoon nutmeg
2 teaspoons vanilla
2 teaspoons salt
4 eggs
2 cups shredded carrots
1 cup crushed pineapple
1 ½ cup oil
1 cup chopped nuts
Mix all dry ingredients first then beat in oil next beat in eggs. Now
mix in carrots and pineapple. Bake at 350 degrees for 30 to 45 minutes.
Cream Cheese Frosting
1 8 - ounce cream cheese
½ cube butter
2 cups confectioners sugar
1 teaspoon vanilla
Combine cream cheese with butter and mix sugar and vanilla in until
smooth. Cover the cake with this frosting and sprinkle with coconut and nuts.
